Overnight Blueberry French Toast Casserole Recipe

It is a deliciously crunchy and creamy treat that can be served as breakfast or brunch or even with your dinner. It is fairly easy to make and you can avoid all the fuss of last-minute cooking. And who doesn’t love to make a quick treat?

Preparation and Cooking Time

Preparation time: 30 minutes

Cooking time: 35 minutes

Total time: 1 hour and 10 minutes

Ingredients

1 and a half loaves of bread
10 tablespoons of cream cheese (4 ounces)
1 cup of fresh or frozen blueberries (6 ounces)
5 eggs
1 cup of milk
1 teaspoon of vanilla extract
Half teaspoon of cinnamon
Half cup of powdered sugar

For the Syrup
1 cup of fresh or frozen blueberries (6 ounces)
1 cup of cold water
2 tablespoons of corn starch
Half cup of sugar

Directions

Lightly grease a casserole dish or a baking dish.

Cut the bread into cubes.

Take one half of the diced bread and evenly spread it over the bottom of the dish.

In a small bowl combine cream cheese, powdered sugar and 1 tablespoon of milk and mix together until the mixture turns creamy and smooth, not watery. If you need to make the mixture thicker add some more powdered sugar.

With a spoon, evenly apply the cream cheese mixture over the layer of bread cubes.

Sprinkle blueberries over the cream.

Now on top of that add the remaining half of bread cubes.

Take another bowl and in it combine eggs, 1 cup of milk, vanilla extract and cinnamon. Stir well.

Pour mixture over the bread cubes and sprinkle with remaining blueberries.

When you have done then you can cover your dish and place it in the fridge overnight.

Preheat the oven at 400°F.

You should remove your casserole from the fridge about 30 minutes prior to baking it.

Bake your casserole covered for about 25 minutes.

After that remove the foil and bake for another 10 minutes.

Blueberry Syrup

You can prepare the blueberry syrup the night before or while the casserole is baking.

Take a smaller saucepan and in it heat the mixture of cold water, corn starch, and sugar. Once the mixture begins to boil add a cup of blueberries while stirring the mixture the whole time.

Lower the heat and let it cook for about 10 minutes, stir occasionally.

Your syrup is now done and ready to be served with your casserole.
