Lemon Blueberry Loaf Recipe

Ingredients for Lemon Blueberry Loaf

1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
Half cup of coconut oil
2 teaspoons vanilla extract
1 cup brown sugar
1 lemon zest and juice
1 cup farm fresh blueberries
Half teaspoon salt
2 eggs
Half cup milk

Directions – Lemon Blueberry Loaf

Preheat the oven to 350 degrees Fahrenheit.

In a large mixing bowl, mix coconut oil, vanilla extract and lemon juice. Mix thoroughly.

Sift the flour and baking powder. Beat the eggs while slowly adding milk to this mixture.

Now, add sugar and salt. Stir well to combine all the ingredients. The batter must be firm and thick.

Grease a 9×5 loaf pan with a little butter, and spread the batter evenly in the pan by tapping the pan against the table.

Bake for 50 to 60 minutes in the preheated oven until a toothpick inserted into the center of the loaf comes out clean.

Remove the bread from the oven after this and cool it for 10 minutes.

You can glaze the loaf with a mixture of lemon juice and sugar after it is cooled down or eat it as it is. Either way, the taste is super yummy.
