Ingredients
2 lbs of potatoes (around 10 medium-sized potatoes)
3 tablespoons of olive oil
1 packet of ranch dressing mix (1 ounce)
One and a half teaspoon of freshly ground black pepper.
For the dip
1 onion
1 cup of sour cream
3 tablespoons of mayonnaise
1 teaspoon of freshly minced parsley
1 teaspoon of lemon juice
One-fourth teaspoon of salt.
Directions
Preheat oven to 425°F degrees.
Thoroughly wash the potatoes, do not peel them.
Cut potatoes in half and put them in a parchment-lined dish.
Combine olive oil, ranch mix, and pepper in a small bowl.
Pour the mixture over potatoes and stir potatoes around until all potatoes are evenly coated.
Put them in the oven and bake for 25 to 30 minutes or until browned. Prepare the dip while potatoes are baking:
a. Mince the onions.
b. In a small bowl combine all the ingredients and stir until mixture is smooth and even.
c. Serve with potatoes once they are done.
You can serve these with any other dip or sauce of your liking.
