Pecans = 2 cups chopped
Lemon juice = 1 tablespoon
Milk = 1 cup
Butter = three-fourth cup
Sugar = 2 cups
All-purpose flour = three-fourth cup
Baking soda = 1 teaspoon
Eggs = 3
Vanilla essence = 2 tablespoon
Preheat your oven at 350 degrees.
Grease your baking pan now and spread chopped pecans over it.
Take a small cup and add 1 tablespoon lemon juice and 1 cup milk. Mix it and set aside.
Add three-fourth cup of butter and sugar in a bowl and mix it at medium speed till it becomes smooth, fluffy and stiff.
Take a bowl and add flour and baking soda mix them well then add the butter mixture in it beat this mixture again and keep on adding the sour milk in this mixture slowly while beating.
Take another bowl and beat the egg white in them at maximum speed so they become fluffy and smooth.
Now add the remaining chopped pecans and egg whites in the butter mixture and mix them well.
Divide this mixture in three equal parts and add them in three baking pans.
Bake these pans in the preheated oven for about 25 minutes then let these to cool down.
Now we will prepare the filling, combine half cup of the brown sugar with eggs yolk, cornstarch, light cream and corn syrup in a pan and heat it over medium heat.
Stir it continuously and let it to boil for 1 minute. After this let this solution to cool down and add butter and vanilla, stirring continuously is necessary.
We will assemble the cake now, start by placing one piece of the cake on your serving dish, and spread pecans on it with their face upside.
Top up this with the chilled filling that you had prepared, repeat this for every layer till the last piece of cake.
Now whip the cream and sugar till they become fluffy.
Refrigerate this for about 2 to 3 hours.
Your delicious and chilled pecan pie cake is ready to serve.
