Ingredients

3 fresh tomatoes, diced
1 can of diced tomatoes
1 tablespoon of tomato puree
1 cup of crushed tomatoes
1 lb Italian sausages
1 onion, diced
3 cloves of garlic, minced
2 tablespoons of Olive oil
Half teaspoon black pepper, thyme, and fresh parsley
1 tablespoon fresh basil
1 teaspoon Italian seasoning of choice
Salt as required
Half cup of shredded parmesan cheese
12 oz linguine pasta

Directions

Preheat the oven to 450 degrees.

Roast the fresh tomatoes in olive oil with Italian seasonings for about 20 minutes until the edges are slightly charred.

On a separate pan cook tomato puree, crushed tomatoes and canned diced tomatoes and let it simmer for 15 minutes.

Add the roasted tomatoes to this mixture and top the mixture with black pepper, basil, and thyme for additional flavors.

Remove from heat and add salt to taste.

After cooling, put this mixture into the blender to acquire the sauce consistency.

Fry the Italian sausages in a bit of olive oil after gently removing the casings. Add garlic, parsley, and onions. Cook until the fat is drained.

Boil the Linguine pasta as per the directions is given on the package. Keep an eye on it as you don’t want to overcook the pasta. Add in a bit of olive oil to keep the pasta from sticking together.

Transfer the cooked pasta into a large mixing bowl. Add the roasted tomato sauce that is bustling with flavors and mix thoroughly such that every inch of the pasta is coated with the sauce. Mix the Italian sausages also.

Top it with parmesan cheese, garnish with fresh basil and it is ready to serve.
