Ingredients

  1. Green chili pepper = 1 can (rinsed, seeded and chopped)

  2. Yellow corn meal = 1 cup

  3. Baking powder = 1 teaspoon

  4. Sugar = 1 teaspoon

  5. Milk = 1 cup (can be buttermilk)

  6. Baking soda = 1 teaspoon

  7. Cheddar cheese = 1 pack (grated)

  8. Eggs = 2

  9. Unsalted butter = one-fourth cup (melted)

  10. Dried onion = 1 teaspoon

Directions


  1. Take a bowl and add corn meal, flour, baking powder, sugar, baking soda and salt together.

  2. Preheat oven at 350 degrees for about 30 minutes.

  3. Now add eggs and milk and mix them nicely together in the mixture that you had prepared.

  4. Add the dried onions in this paste and mix well again. Set this paste aside for 5 to 10 minutes.

  5. After 5 to 10 minutes add corn, red chili peppers, and shredded cheese in the mixture that you had prepared and set it aside.

  6. Prepare a baking sheet or grease muffin cups.

  7. Add this mixture in muffin cups or on your baking sheet and bake for about 30 to 45 minutes you can bake them in any shape you want other than the muffins.

  8. Your hot and delicious chili corn bread is ready to eat. It can be served with melted butter to make it more delicious.
